Garlic Parmesan Chicken and Potatoes

Ingredients
  

  • 1 lb chicken breasts cut into cubes
  • 4 - 5 small/medium-sized russet potatoes
  • olive oil + salt pepper, garlic powder, paprika (for potatoes)
  • 2 tbsp of butter
  • 1/2 tsp each of salt and pepper
  • 1 tsp each of paprika onion powder, and Italian seasoning
  • 1-2 tbsp minced garlic
  • Buffalo Wild Wings Garlic Parmesan Sauce
  • 1 cup shredded mozzarella cheese

Method
 

  1. Wash potatoes, peel them, and cut them up into small cubes.
  2. Toss the potatoes with olive oil, salt, pepper, garlic powder, and paprika (I don’t use exact measurements for this part). Just be sure they are well coated in oil and seasoning.
  3. Cook the potatoes in the air fryer at 400 degrees F for about 25 minutes shaking them around at least a couple of times while they cook.
  4. Once the potatoes are about half way through cooking, cut the chicken into cubes.
  5. Cook the chicken in a skillet on medium-high heat with 2 tbsp of butter.
  6. Season the chicken with 1/2 tsp each of salt and pepper, 1 tsp each of paprika, onion powder, and Italian seasoning.
  7. Once the chicken is finished cooking add minced garlic and the Parmesan Garlic sauce. Use just enough of the Parmesan Garlic sauce to coat the chicken.
  8. Add the crispy cooked potatoes to the skillet and stir well.
  9. Top with shredded mozzarella cheese.
  10. Broil in the oven for just a few minutes to melt the cheese (you could also cover it with a lid and let this sit on the stove until the cheese melts). Top with dried parsley and a little bit more Parmesan Garlic sauce if you can handle the heat! Enjoy!

Notes

If you don't have an air fryer, you can cook the potatoes in the oven at 400 degrees F for about 30 minutes. It also helps to stir the potatoes around a few times while they cook.
