Healthy Chicken Alfredo

Image

Creamy pasta doesn’t have to feel heavy to be satisfying, and this healthy chicken alfredo proves it. It keeps the familiar comfort of a classic Alfredo but lightens the sauce with milk and broth instead of relying entirely on cream. I like this version for weeknights because it comes together quickly and still feels like a full, balanced meal.

Why this recipe works

The sauce is built differently than traditional Alfredo, and that’s what makes it work. A mixture of chicken broth, milk, and cornstarch thickens into a smooth, creamy base without needing a lot of fat. Parmesan brings the flavor you expect, while the chicken and vegetables make it substantial.

Cooking the pasta separately keeps the texture right, while everything else comes together in one pan. When you combine it at the end, the sauce coats the noodles without turning gluey.

This makes a generous batch that can feed a family or give you leftovers for the next day.

Ingredients

  • 1 1/2 pounds chicken breasts or thighs, cut into 1 inch pieces
  • 4 cups broccoli florets, frozen peas or chopped spinach
  • 11 ounces fettuccine (whole wheat, regular or gluten-free)
  • 1 cup chicken broth (low sodium)
  • 2 cups milk (2% or 3.25%)
  • 2 tablespoons cornstarch
  • 1/2 teaspoon salt, plus more for pasta and chicken
  • 1/4 teaspoon ground black pepper
  • 1/2 cup Parmesan cheese, grated
  • 1 large garlic clove, minced
  • 2 tablespoons parsley, finely chopped
  • 1 1/2 tablespoons avocado oil, divided

Start with the pasta

Bring a large pot of water to a boil. Add a pinch of salt, then cook the fettuccine for 8 to 10 minutes, stirring occasionally so the noodles don’t stick together.

You’re looking for al dente—tender but with a slight bite. The pasta will cook a little more when it’s added to the sauce, so don’t overdo it here.

Mix the sauce base

While the pasta cooks, combine the chicken broth, milk, cornstarch, and 1/2 teaspoon salt in a medium bowl. Whisk until smooth and set aside.

This step matters because cornstarch can settle quickly. Giving it a quick whisk again before adding it to the pan helps the sauce thicken evenly.

Cook the vegetables

Preheat a large ceramic non-stick skillet over medium heat. Add 1/2 tablespoon of avocado oil and swirl to coat.

Add the broccoli and cook for 1 minute. Then pour in a small splash of water and continue cooking for another 2 minutes, just until the broccoli turns bright green and begins to soften.

Transfer the broccoli to a bowl and set it aside. This keeps it from overcooking while you prepare the rest.

Cook the chicken

Return the skillet to medium heat and add the remaining 1 tablespoon of oil. Add the chicken pieces and minced garlic, then sprinkle with 1/2 teaspoon salt and 1/4 teaspoon black pepper.

Cook for about 7 minutes, stirring occasionally, until the chicken is cooked through and lightly golden in spots. The garlic should be fragrant but not browned.

Cutting the chicken into evenly sized pieces helps it cook at the same rate, which keeps the texture consistent.

Build the sauce

Give the cornstarch mixture another whisk, then pour it into the skillet with the chicken. Stir right away to prevent lumps.

Bring the mixture to a gentle boil, then let it simmer for about 2 minutes. You’ll see it thicken into a creamy sauce that coats the back of a spoon.

Add the grated Parmesan cheese and stir until it melts completely into the sauce. The texture should be smooth and slightly glossy.

Bring everything together

Drain the pasta and add it directly to the skillet, along with the cooked broccoli. Toss everything together so the noodles are evenly coated in the sauce.

Let it warm through for about a minute. If the sauce thickens too much, add a small splash of milk or broth to loosen it.

Finish and serve

Sprinkle the chopped parsley over the top and add more Parmesan cheese if you like. Serve it while it’s hot so the sauce stays smooth and coats the pasta well.

The final dish should feel creamy but not heavy, with tender chicken and vegetables mixed throughout.

Ingredient notes and flexibility

Chicken: Both chicken breasts and thighs work here. Thighs stay a bit juicier, while breasts are leaner.

Vegetables: Broccoli is a classic choice, but frozen peas or chopped spinach work just as well. Use what you have, and adjust cooking time slightly depending on the vegetable.

Milk: Using 2% or 3.25% milk keeps the sauce creamy without making it too rich. Skim milk will work but produces a thinner sauce.

Parmesan: Freshly grated melts better and blends smoothly into the sauce. Pre-grated can work, but it may take a little longer to incorporate.

Common mistakes and how to avoid them

Adding the cornstarch mixture without whisking can lead to lumps. Always stir it first.

Overcooking the pasta makes it too soft once combined with the sauce. Aim for al dente in the pot.

Cooking the sauce over too high heat can cause it to thicken too quickly or unevenly. Keep it at a steady simmer.

Letting the sauce sit too long before adding the pasta can make it overly thick. Combine everything soon after it’s ready.

Storage and reheating

Store leftovers in an airtight container in the refrigerator for up to 1–2 days.

When reheating, add a splash of milk or broth and warm it gently on the stove. Stir frequently and add more liquid as needed until the sauce returns to a creamy consistency. It should taste close to freshly made once loosened.

Freezing isn’t recommended for this dish. The pasta tends to lose its texture, and the sauce can separate after thawing.

FAQ

Can I use a different type of pasta?
Yes. Any long pasta works well, and even shorter shapes can be used. Just cook to al dente and follow the same steps.

What if my sauce is too thin?
Let it simmer a bit longer to thicken, or add a small slurry of cornstarch and milk if needed.

Can I make this dairy-free?
You can substitute plant-based milk and cheese, but the flavor and texture will change. Choose unsweetened options for best results.

How do I keep the chicken from drying out?
Avoid overcooking. Once it’s no longer pink and lightly golden, move on to the next step so it stays tender.

This healthy chicken alfredo strikes a good balance between comfort and practicality. It’s the kind of meal that feels familiar but fits easily into a regular cooking routine without much extra effort.

  2. Meanwhile, in a medium bowl, add chicken broth, milk, cornstarch and 1/2 teaspoon salt. Whisk and set aside.
  3. Preheat large ceramic non-stick skillet on medium heat and swirl 1/2 tablespoon oil to coat. Add broccoli and cook for 1 minute. Then add a splash of water and cook for another 2 minutes or until bright green. Transfer to a medium bowl and set side.
  4. Return skillet to medium heat and add remaining 1 tablespoon of oil, chicken and garlic, then sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook for 7 minutes, stirring occasionally.
  5. Give cornstarch mixture a whisk and add it to the skillet. Stir, bring to a boil and simmer for 2 minutes until sauce has thickened. Add Parmesan cheese and stir until cheese has melted.
  6. Drain pasta and add to the skillet along with previously cooked broccoli. Stir and let chicken alfredo warm through for a minute.
  7. Garnish with parsley and more Parmesan cheese, if you wish. Serve hot.

Notes

  • Store: Refrigerate leftovers in an airtight container for up to 1-2 days. To “rehydrate” the noodles, add a splash of milk or broth while simmering on the stove. Add as much milk as you need until desired consistency. It will taste like fresh.
  • Freeze: I don’t recommend to freeze pasta as it doesn’t freeze well.
